Rouge and his team at Bar 1, located upstairs at 291 Front St., are noted for creating unique and memorable mocktail offerings. Their menu often features drinks inspired by local Key West landmarks and culture. Examples include the "Bahama Village," a blend of pineapple juice and ginger demerara, and the "Poinciana," which combines non-alcoholic smoked agave, house-made rosé syrup, lime juice, and blackberry syrup.

The artistry of craft mixology is now being applied to zero-proof beverages, utilizing premium non-alcoholic spirits, house-made syrups, fresh citrus, and botanicals.
